ONABAY Vineyards - Yellow Crown Chardonnay

This wine gets its inspiration from the great white wines of Chablis, interpreted through the unique conditions on the North Fork. Hand harvested at the peak of ripeness in the superb 2013 vintage, the grapes were beautifully balanced and full of sweet flavor. By avoiding malo-lactic fermentation and keeping the wine in cool, stainless steel vessels, bright, primary fruit flavors stay in the forefront. Lees stirring enhanced the structure and breadth of the wine. The 2013 Yellow Crown was bottled in May of 2014.

Tasting Notes
Nectarine, apple and key lime aromas are accompanied by notes of wet stone minerality. On the palate the wine is surprisingly rich, yet refreshing. Balance and intensity make the Yellow Crown an excellent choice for seafood-- from oysters to lobster to striped bass.

This wine is inspired by the Blanc de Blanc Champagnes of the Cote des Blancs region . By carefully selecting and hand harvesting chardonnay at their precocious vibrant stage of early ripeness, the grapes retain all of the nervous acidity and minerality made possible by the North Fork's cool maritime climate.

The wine is made by the traditional, old world method of inducing a secondary fermentation in the bottle. With over 30 months en tirage (resting on its lees), this sparkling treat exudes elegant balance.

Tasting Notes
The 2012 Blanc de Blanc possesses bright aromas of green apples, lemon verbena, and ripe grapefruit. On the palate, these aromas are joined by refreshing flavors of Bosc pear and citrus, that lead to a crisp and clean finish.



Onabay Rose of Cabernet Franc Brut 2013

Inspired by the beautiful sparkling wines of the Loire Valley, this is crafted in the traditional style, with secondary fermentation in the bottle. After carefully selecting from among the several parcels of cab franc, the grapes are hand harvested and gently pressed just enough to release a hint of color and a mouthful of flavor.

Left on the lees (en tirage) for over 20 months the 2013 offers bright, delicate elegance.

Tasting Notes
Aromas of wild strawberry and fresh pomegranite carry through on to the palate. Note the balance between tingly fruit and refreshing tang... cabernet franc in its most youthful and carefree form.

ONABAY Vineyards - Great Blue Heron Merlot

Hand harvested merlot from three distinct clonal selections is combined with cab franc and malbec to create a dark, aromatic, mouth full of wine. After de-stemming, the grapes soaked for two days at 52 degrees F to extract color prior to starting primary fermentation. Gentle punch down management of the ferment led to careful pressing and malo-lactic conversion in barrel. The wine was aged for 17 months in 20% new and 80% seasoned French Oak.

Tasting Notes
The 2012 Great Blue Heron offers sweet aromas of plums, bing cherries and a hint of licorice. The palate is even more surprising... a rich mouth full of ripe flavors combine with elegant tannins and a gentle finish. This generous wine nicely matches grilled meats, roasts and barbecued chicken.

ONABAY Vineyards - Cabernet Franc Cot Fermented

Following a long standing old world tradition of fermenting different grape varieties together, two distinct clones of ripe cab franc and a small percentage of malbec (aka Cot), were hand harvested on the same day, destemmed and soaked for two days at 52 degrees F, then set to fermenting. This co-ferment achieves a harmonious integration of the characteristics of each variety. After malo-lactic conversion in barrel the wine aged for nine months in seasoned French oak, then bottled at its bright and juicy height.

Tasting Notes
The 2013 Cot-Fermented bursts with fresh raspberry and blackberry aromas. On the palate there is a bright mouthful of vibrant ripe fruit that finishes with delicate savor. Enjoy this juicy wine with everything from grilled fish to roast chicken to BBQ.

ONABAY Vineyards - Cabernet Franc Night Heron

There is a parcel of cab franc at Onabay that every vintage produces beautifully balanced canopies and a moderate crop of small, intensely flavored grapes. Always hand harvested and handled as a separate, special lot, in the best vintages it stands out as a distinctively delicious example of ripe cabernet franc, and is bottled as Night Heron. This block of cab franc averages just over two and a half tons per acre. In 2012 the yield was below two tons per acre.

While these grapes are destemmed, soaked and fermented much the same way the other blocks of cab franc are handled, the result is something bigger, deeper and totally entrancing. The 2012 spent 17 months in French oak, 30% new barrels, and was bottled in May of 2014.

Tasting Notes
Penetrating aromas of wild raspberry and blueberry form an amazingly pure introduction to this exciting wine. Then richly intense flavors cover the tongue, those same berry flavors in liquid focus. Most surprisingly, after this concentrated mouthful of cab franc, a gentle, elegant finish ensues and seduces you into another sip. Savor it with fine cuts of meat, fresh duck breast, wild mushrooms... or all by itself. This is Cabernet Franc at its absolute best.
